Carrot & Mushroom Loaf

Ingredients:

• 1 Medium Onion
• 1-5 Cloves of Garlic
• 2 tbsp oil or butter
• 200gms Mushrooms
• 3 cups grated carrot
• 1/2 cup grated cheese
• black pepper
• 1/2 cup milk
• 2 eggs
• 1/2 cup dried breadcrumbs
• 1 tsp basil
• 1/2 tsp thyme
• 1/2 tsp salt

Topping:

• 2 tbsp dry breadcrumbs
• 2 tbsp cheese
• paprika

Finely chop onions and garlic then fry lightly and add mushrooms until soft. Remove from pan and add remaining ingredients (not topping). Mix well. Pour into a greased loaf tin. Sprinkle with topping and cover with foil.

Cook covered for 30 minutes at 180°C, then remove foil and continue cooking for another 45 minutes.

Serve with fresh green salad and tomatoe sauce.
